Wolf builds cooking appliances. It does not build refrigerators, freezers or dishwashers. If the fault is on the cold side of your kitchen it belongs to one of the other makes we work on, and the first thirty seconds of the phone call sorts that out.
Almost everything we see on a Wolf splits into ignition and heat control on one side, and the steam circuit on the other.
Ignition faults are the ones people notice immediately. A surface burner that keeps clicking after it has lit is telling you the spark module is not getting the flame signal back — usually a burner cap that is seated a fraction out of position, a port blocked by boil-over, or a moist igniter. On the coast in 32082 the same symptom has a third cause: salt-laden air corroding the igniter tip and the connection behind it. That is not wear. It is chemistry, and it is why an identical range in World Golf Village 32092 can go years longer between igniter replacements than one four miles from the dune line.
Heat-control faults are slower and people put up with them. An oven that has drifted twenty degrees does not announce itself; it announces itself through baking. When a cook who has used the same oven for six years starts saying the cakes are wrong, the sensor or the element is usually the reason, and a calibration check settles it in one visit.
A convection steam oven is a conventional oven with a complete water-handling machine built in behind the cavity, and nearly every steam-specific complaint belongs to that machine rather than to the oven. There is a reservoir or a plumbed feed, a pump, a level sensor, a generator with its own element and thermostat, a path into the cavity, and a drain.
“There is less steam than there used to be” is therefore not one fault, it is at least four. The pump may not be delivering. The level sensor may be misreporting the reservoir in either direction. The generator element or its thermostat may have degraded, so the same energy input produces less steam. Or the path into the cavity may be restricted, in which case the generator is working perfectly and the steam is not arriving where anyone can see it.
Those separate on measurement rather than on inspection — temperature at the generator, continuity and resistance on the element and its sensor, and whether the reservoir draws down at the rate the cycle should consume. A reservoir emptying faster than the cycle explains is a leak or a drain fault, not a steam fault, and it is worth catching early because the water is going somewhere.
The coffee systems split the same way. The brew unit is mechanical, jams and refuses to return home, and lives on its own maintenance schedule. The water path is separate, and a machine brewing short and slow is reporting a restriction along it. Diagnosing them together is how a good brew unit gets replaced for nothing.
A second local pattern is installation rather than failure. Wolf ranges and rangetops need specific clearances and a hood that actually moves the rated airflow. In older St. Augustine kitchens, where a modern range has been fitted into a much older opening, we regularly find make-up air that was never addressed and a duct run with more elbows than the blower can overcome. The hood then reads as weak when the blower is fine. That is a measurement, not a guess, and it is worth doing before anyone buys a new one.

One rear burner would light then die whenever the pan went on. He found the spark module firing on the wrong port and a burner cap that had been seated wrong for a long time. Both sorted in the one visit.

The convection oven had started tripping its own thermal cutout part way through anything long. He found the cooling fan seized and the vent path packed with grease from the hood above. Cleaned, refitted, and it runs through now.

The simmer would not stay low and kept jumping up. He rebuilt the valve on that burner and adjusted the low flame screw. It behaves now, though he had to come back once with the right rebuild kit.
